You do not need to dry fresh dug green peanuts before boiling them. Just wash the peanuts in cool water several times to remove dirt from their shells and they are ready to boil.
Fresh dug green peanuts are the best for boiling.
Green peanuts only require about 1 to 2 hours of boiling.
Because fresh dug green peanuts are full of moisture (up to 50%) they must be boiled soon after harvest or they will spoil. Raw green peanuts can be frozen for months, or kept in a dry cold environment for 7-10 days before they spoil.
You could dry green peanuts to about 10% moisture for long term storage. However, if you want boiled peanuts your best bet is to either freeze them while fresh dug (green, wet and washed) or boil them immediately and freeze the boiled peanuts (good for several months).
I love the taste of green boiled peanuts that were frozen and reheated.
