Unless you have hard water (high mineral content), or are boiling peanuts at high altitude, the most important factors influencing your boiling time for dried raw peanuts would be the temperature of liquid in your slow cooker, and time.
Check the temperature of the liquid in your slow cooker, with your peanuts. Temperature, and time are the dominating factors when boiled peanuts.

Well it’s definitely not altitude because I’m in Florida, lol. What temp am I looking for? After 48 hours I turned it on high and they finally softened up. But on high the water evaporates so fast that it’s hard to let them cook while I’m at work.

My roommate and I once had the exact same thing happen..... also in Florida. We boiled peanuts for hours and hours and hours and hours, checking them and adding water and salt and tasting every few hours... but they boiled all night long and half the next day with little to no change...... Admittedly, we were quite drunk when we purchased them and started boiling the batch. Turns out, in our inebriation, we had mistakenly purchased roasted peanuts.
