Tami, You should refrigerate leftover boil peanuts just as you would cooked peas or beans. There is so much moisture in boiled peanuts that they will spoil and may harbor bacteria if left out at room temperature more than a couple of hours.
Boiled peanuts taste great cold, and the refrigerator will keep them fresh for several days (again like leftover peas or beans).
For longer term storage you can freeze boiled peanuts.
Just put them in a plastic bag, and place them in the freezer. Frozen boiled peanuts will stay good for many months. When you are ready to eat them either thaw them in the refrigerator overnight, or thaw them in the microwave, or thaw the frozen boiled peanuts in some hot water for a few minutes. You can add salt to the hot water to maintain or increase the salty goodness as you re-heat them.

Anon, It's not clear to me whether you are asking about reducing sodium when reheating boiled peanuts, or when making them.
If you reheat boiled peanuts in plain water, some of the salt will leach out of the peanuts, and into the water. This will reduce their salty taste, also.
The way to make flavorful boiled peanuts with less sodium is to use less salt, and add flavor by using other ingredients.
Many online boiled peanut recipes recommend too much salt. We usually suggest 1/2 cup of salt per gallon of water.
Since you want to reduce sodium, try 1/4 cup of salt per gallon of water. Add flavor with any of the following: garlic (raw, dried, or powder), onions (raw, dried or powder), cayenne, paprika, liquid smoke (some have 0 sodium), black pepper, white pepper, basil leaves, thyme, allspice, cloves, ginger, cardamom, basil, marjoram, oregano, sage, star anise, Sichuan pepper, red pepper flakes, turmeric, Zatarain's Crawfish, Shrimp and Crab Boil (in a bag), curry powder, rosemary, or other herbs and spices.
You can also use fresh jalapeno, habanero or other spicy peppers. Some people add halved lemons or limes.
The possibilities are endless.

Yes, you can still eat boiled peanuts left out just as long as they don't smell soured. I have done this forever. It doesn't hurt a thing just make sure they aren't soured.

While I don't recommend leaving them out long, I regularly leave them out overnight or about 8 to 12 hours. It let's them cool (I boil half my crop, so it's at least a 3gal. stockpot) and soaking increases absorption. They sour quickly, though, but there is no 'they may be bad'. It is unmistakable. Peanuts don't begin to turn, they turn. So if they smell and tast fine, fridge or freezer. I wouldn't keep them in the fridge any longer than peas or other high starch items, but unlike a lot of potato items they freeze beautifully. If they already taste the way you want them to, I would put them in the fridge or freezer as soon as they cool, as they continue to absorb salt and seasoning while remaining in the brine.

I put my boiled peanuts on my drawer/closet and leave it in there for a couple of days. Then, when I saw it doesn't smell bad or look spoiled, it's dry like without any moisture on it. And when I open it, the peanuts inside are also dry and it hardened. So i ate it. Is it bad?

I usually drain my boiled peanuts and store in the fridge. But can I store them in the liquid from the crock pot in the fridge? They are just so juicy once out of the crock pot, and lose a bit of juice when they are stored in a bag by themselves.

The consumer has no way of determining the percentage of salt in the boiled peanuts they consume. Yes, salt acts as a preservative, but is there enough to prevent the growth of pathogenic bacteria? With over 40 years as a Food Safety Professional, I always advise consumers to err on the side of safety and refrigerate them overnight.

If you happen to be the less energetic person after a long day at work or whatever your day consisted of, not just lazy. I boiled peanuts and took them off the heat and enjoyed probably a pound or so and went at sat in my recliner to watch the afternoon news. I inadvertently fell asleep and was woke up the next morning for work. And I didn't remember the peanuts. Anyways when I came home still forgot and wasn't till next day that I remembered them and noticed mold atop the 🥜. I know mold is a fungi but it is also called penicillin people sure may taste bad but just boil them again the go right back to awesome.

From south Georgia here. Use common sense with peanuts is all that's needed. When sorting the peanuts from vine it's OK to pick young ones it adds flavor. If they don't look good don't pick them. Rinse several waters to get dirt off. In boiling salt brine to taste. Boil to your taste. I never leave out more than an hour. If it tastes sour throw it away, otherwise it's OK if you sorted right. I always freeze mine, that way I eat em when I want to for at least a year. Frozen, cold, or re-boiled I Love em!
