I soak my boiled peanuts just like I do crawfish. When we have tasted them along the way, to make sure they are done enough for our taste, I turn the fire off and put a sack of ice on them. The sudden temperature change "encourages" the peanuts to absorb the stock they are boiled in and they sink. Then you taste again as you go to make sure they have taken in all the flavor of the stock.
