Wet Boiled Peanuts

Why are the peanuts I boil full of water when I crack the shell. Even days after storing in the refrigerator?

That's a good thing IMO. I wouldn't want a dry one, the salty wet coming out of a ground pea is a real Southern Boiled Goober.
